INGREDIENTS

  • 1 Large Chicken Breast
  • FlavorGod Hot Wing seasoning
  • FlavorGod Himalayan Salt & Pink Peppercorn
  • Avocado Oil
  • 2 Cups Quinoa
  • 4 Cups Water or Broth
  • Fresh Parsley
  • Tomatoes
  • Lemon Zest
  • Feta Cheese (optional)
  • Extra Virgin Olive Oil (For Drizzling)

INSTRUCTIONS

  1. 1 Place the chicken breast on a cutting board and flatten the thicker parts using a meat mallet or the bottom of a heavy pan.
  2. 2 Season one side of the chicken breast heavily with FlavorGod Hot Wings seasoning and lightly with FlavorGod Himalayan Salt & Pink Peppercorn.
  3. 3 Heat avocado oil in a skillet over low flame.
  4. 4 Cook the lightly seasoned side of the chicken breast for 3 minutes with the lid on.
  5. 5 Flip the chicken breast and cook the heavily seasoned side for another 3 minutes with the lid on.
  6. 6 In a medium-sized pot, bring 4 cups of water or broth to a boil.
  7. 7 Add 2 cups of quinoa to the boiling water or broth.
  8. 8 Reduce the heat to low, cover, and simmer for 20 minutes or until the liquid is absorbed and the quinoa is fluffy.
  9. 9 Fluff the cooked quinoa with a fork and transfer it to a large serving bowl.
  10. 10 Add chopped fresh parsley, diced tomatoes, lemon zest, lemon juice, and a sprinkle of FlavorGod Hot Wings seasoning to the quinoa.
  11. 11 Drizzle extra virgin olive oil over the quinoa mixture and toss gently to combine.
  12. 12 Place a cooked chicken breast on top of the quinoa salad.
  13. 13 Optionally, crumble feta cheese over the bowl for added flavor.
